The story
Julekage is a yeast bread rich with candied fruit, raisins, and warm spices such as cardamom and cinnamon. It is baked in large loaves that last for days after Christmas, usually sliced and spread with butter to go with morning coffee all through December. In concept it resembles German Stollen and Swedish vörtbröd, a dense, fruited holiday bread, but the Danish version is often sweeter and softer, with more icing on top. In some families julekage is baked in two versions: one with more fruit for the adults and a plainer one for children who prefer fewer bits of candied fruit. Making the bread ahead, days before Christmas Eve, is part of a broader Scandinavian logic of holiday organization: whatever can be prepared early is prepared early, so that Christmas Eve itself stays free for family and the meal. For the diaspora, julekage is one of the more approachable Danish recipes for beginning bakers, because a plain loaf forgives less-than-perfect shaping better than, say, braided Czech vánočka.
