The story
It may sound too humble for a holiday, but according to surveys by German media, potato salad with warm sausages is eaten on Christmas Eve in more German homes than any other dish, goose included. The reason is practical. In Germany, December 24 is traditionally a day for going to midnight Mass and visiting relatives, not for roasting meat for hours; that is left for the first or second day of Christmas. Cold or lukewarm potato salad, made ahead and served with hot sausages heated at the last minute, lets everyone sit down at the same time without hours spent in the kitchen. The salad itself varies widely. Some families use mayonnaise, others only oil, vinegar and beef broth for moisture. That very simplicity is why it has been so easy to carry to a new home, in a new country, with nothing lost in flavor.
